Italian Wedding Soup
The MPN approved version of one of my favorite meals… Italian Wedding Soup!
Ingredients:
Mini meatballs, I used @traderjoes version from the frozen section.
1 bag frozen or fresh spinach
1 box of hearts of palm rice
1 32 oz chicken broth
Optional: shaved Parmesan for topping
Directions:
Heat meatballs as directed (I used half the bag).
Place bag of spinach in soup pot and heat until wilted or defrosted. Add in broth, rice, meatballs. Combine and heat for additional 5-10 minutes or until soup reaches your desired temp.
Top with Parmesan and serve!
Perfect for a quick dinner after a night of sports/rehearsals/play dates. I especially love this one because you can keep these ingredients without the risk of them going bad!
